I always love to find new recipes and try them out.  I thought some of you would like them too!!  I will try to post new ones as often as I can.  Here is the first one.

Porcupine Meatballs (This was my favorite meal growing up.  It is still my favorite meal!!)

1 1/2 lb. hamburger

1 pkg. Rice-A-Roni (beef flavored)

1 egg

Salt and pepper to taste

Gravy:

3 c. water

2 Tbsp. cornstarch+1/2 c. water

seasoning packet from rice

        Mix ground beff with dry Rice-A-Roni, egg, salt and pepper.  Forn inot meatballs the size of large walnuts.  Brown in large skillet.  Drain off grease.  Mix 3 cups water with the beef flavor packet and pour over meatballs.  Reduce heat and simmer for 30 min.  Remove meatballs from skillet, leaving broth.  Turn up heat.  Mix cornstarch with 1/2 cup Cold water until smooth.  Slowly pour this mixture into hot broth.  Stir with a whisk until smoothe.  Put meatballs back inot gravy mixture in pan. 

Poppyseed Chicken

Ok, this recipe is not mine, it is from one of the ladies at our church, Sis. Joy.  She makes this alot when she cooks dinner at church and it is alway a big hit.  So many people have asked her for this recipe and I thought I would put it on here so everyone can have it!!!

4-6 Chicken breasts

2 1/2 sleeves Ritz crackers, crumbled

3/4 of a 16 oz. sour cream

2 cans cream of chicken

4 Tbsp poppy seeds

2 sticks of butter, melted

 Bake chicken on 375 for 30-35 min.  Once cooled shred. 

In  med. bowl combine butter poppy seeds and crackers.  Pour 1/2 of the cracker mixture in bottom of 9×13 baking dish.

In another bowl combine chicken, sour cream and cream of chicken soup.  Pour in casserole dish.  Pour remaing crackers on top.  Bake @ 350 for 30-35 min. 

Peppermint Pattie Poke Cake

I got this recipe from a cookbook that makes different cakes using boxed cake mixes.  This one is really good if you like chocolate and mint.

Cake:

1 box Betty Corcker SuperMoist chocolate fudge cake mix

Water, vegetable oil and eggs called for on cake mix box

 Filling:

1 box (4-serving size) white chocolate instant pudding and pie filling mix (if you don’t have white chocolate flavor you can use vanilla, it works just as good)

2 cups milk

1/2 teaspoon peppermint extract

 Frosting:

1/4 teaspoon peppermint extract

1 container (12 oz) Betty Crocker Whipped milk chocolate frosting

3/4 cup coarsely chopped chocolate-covered peppermint patties (8 foil-wrapped candies)

1.  Heat oven to 350 degrees for shiny metal or glass pan (or 325 degrees for dark or nonstick pan).  Spran botton only of 13×9-inch pan with baking spray.  Make and bake cake mix as directed on box for 13×9-inch pan.  Cool 15 minutes.  With handle of wooden spoon. poke top of warm cake every 1/2 inch.

2.  In medium bowl, beat filling ingredients with wire wisk about2 minutes.  Immediately pour over cake.  Cover loosely; refrigerate about 2 hours our until chilled.

3. Stir 1/4 teaspoon peppermint extract into frosting.  Spread frosting over top of cake.  Sprinkle with peppermint patties.  Store covered in refrigerator.

Meatloaf

Ok, this recipe for meatloaf might sound wierd but it is really good.  Laura, the baby, ate a whole piece and the older two ate two pieces each.

1 1/2 – 2 lbs hamburger

1 egg

1/2 cup breadcrumbs

salt and pepper

3 hardboiled eggs

Hardboil the three eggs.  Mix together the hamburger, 1 egg, breadcrumbs and salt and pepper.

Put half of the hamburger mixture into bottom of loaf pan.  Put the three hardboiled eggs down the middle of the hamburger.  Put the other half of the hamburger mixture on top.  Cook on 375 degrees for 45 minutes.  About half way thru baking mix together ketchup and brown sugar and put on top of meatolaf and put back in oven for the rest of the time.

Sweet Potato Casserole

4-5 sweet potatoes

1/2 stick of butter

1/4 cup of milk

1-2 tablespoons white sugar

1-2 teaspoons cinnamon

1/2 cup brown sugar

1/4 cup pecans

1 tablespoon flour

Bake sweet potatoes in oven on 375 degrees for an hour.  When they are cooled peel potaoes and put in a bowl.  Add the milk, half of the half of stick of butter and white sugar and cinnamon.  Put in a small casserole dish.  Mix together brown sugar, rest of butter, pecans and flour.  Put on top of sweet potato and put back in oven for 30 min at 375.

 

Peach Cobbler

Crust:

2 1/2 cups flour

3 Tbs sugar

1 tsp salt

1 cup chortening

1 egg

1/4 cup cold water

 

Filling:

3 lb. fresh peaches

1/4 cup lemon juice

3/4 cup orange juice

1/2 cup butter

2 cups sugar

1/2 tsp nutmeg

1 tsp cinnamon

1Tbs cornstarch

 

Topping:

1 Tbs sugar

1 Tbs butter, melted

 

1.  In med bowl, sift together flour, sugar dn salt.  Work in shortening with pastry blender wuntil mixture is coarse crubles.  In small bowl whisk together egg and cold water.  Sprinklw over flour mix and work with hand to form dough.  Chill 30 min.

2.  Preheat oven to 350.  Roll out 1/2 of dough to 1/8″ thickness.  Place in 9 x 13″ baking pan, covering bottom and half way up sides.  Bake for 20 min or until golden brown.

3.  In large saucepan, mix peaches, lemon juice and orange juice.  Add butter and cook over med. heat until butter is melted.  In mixing bowl, stir together sugar, nutmeg, cinnamon and corstarch.  Mix into peach mixture.  Remove from heat and pour into baked crust. 

4.  Roll remaining dough to 1/4″ thickness.  Cut into 1/2″ wide strips.  Weave strips into a lattice over peaches.  Sprinkle with sugar and drizzle with butter.

5.  Bake for 30-40 min. or until top is golden brown.

 

 

Blueberry Pancakes – These pancakes are really fluffy.  They are so good!!!!!

1 cup milk

1/4 cup sour cream

1 cup flour

1 Tbs baking powder

1 Tbs sugar

1/4 tsp salt

2 Tbs melted butter

1/2-3/4 cup fresh blueberries ( it depends on how big they are, how much you will use)

1.  In larfe bowl, stir milk, egg and sour cream.  In a seperate bowl stir together flour, baking powder sugar and salt.  Add milk mixture to flour mixture.  Stir batter until large lumps disappear.  Stir in melted butter.  Add blueberries, fold in gently.

 

 

Flour Tortillas-  I am really into making things homemade right now.  Let’s face it, times are a little tough right now and I am just trying to make our dollar stretch just a little further.  These are really good.

 

2 cups flour

1/2 cup shortening

3/4 cup warm water

1 1/2 tsp salt.

 

1.  Mix all ingredients in bowl, then turn out on counter and knead dough for 1 min.

2.  Divide dough into 8 rounded balls.

3.  Heat up heavy frying pan over med. heat.  (They say that cast iron pans are the best for this.  I don’t have one so I just used my biggest and heaviest pan I had and it worked just fine.)

4.  Sprinkle some four on counter and roll out each ball into flat circle, 6″ diameter.  Dust of excess flour and place into pan.

5.  Cook on first side until you see pubbles popping all over and then flip and cook on other side for just a minute.

 

Honey Glazed Snack Mix

Ingredients:

6 cups Crispix cereal ( I didn’t have that cereal on hand but I did have Chex, so I used that)

5 cups minature pretzles

1 1/2 cups pecan halves ( Again, I didn’t have pecans, so I used peanuts.  I also threw in a small bag of slivered almonds)

1/2 cup butter

1/2 cup honey

1. In large bowl comine cereal, pretzels and nuts.  In a small sauce pan, comine butter and honey.  Cook and stir until butter is melted and mixture is smoothe.  Pour over cereal mixture and mix well.

2. Transfer to 2 greased baking pnas.  Bake @ 325 for 15 min. , stirring every 5 min.  Cool on wir racks.  Store in air tight containers.

 

Puppy Chow ( Believe me, this is not dog food!!!)

9 cups corn, rice, wheat or chocolate Chex cereal ( or combination)

1 cup semisweet chocolate chips

1/2 cup peanut butter

1/4 cup butter or margarine

1 teaspoon vanilla

1 1/2 cups powdered sugar

Directions:

1. Into large bowl, measure cereal; set aside

2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 min; stir.  Microwave about 30 seconds longer or until mixture can be stirred smooth.  Stir in vanilla.  Pour mixture over cereal, stirring until evenly coated.  Pour into 2-gallon resealable food-storage plastic bag.

3. Add powdered sugar.  Seal bag; shake until well coated.  Spread on waxed paper to cool.  Stor in airtight container in refrigerator.

 

Homemade Marshmallows - We had a bon fire at our house the middle of October and I made these.  They went so fast and everyone wanted the recipe.  So here it is.

Ingredients:

3 packages unflavored gelatin

1 1/2 cups sugar

1  cup light corn syrup

1/4 t. salt

1T. vanilla extract

Confectoners sugar for dusting

 

Directions:

Combine gelatin and 1/2 cup cold water in bowl of electric mixer with wire whisk and allow to sit.

Combien sugar, corn syrup, salt and 1/2 cup water in small sauce pan and cook over medium heat until sugar dissolves.  Raise heat to high and cook until the syrup reaches 240 degrees on candy thermometer.  Remove from heat.

With the mixer on low speed, slowly pour the sugar syrup into dissolved gelatin.  Put mixer on high speed and whip until mixture is ver thick.  About 15 min.  Add vanilla and mix thoroughly.

Dust 9 x 13 in. pan with powdered sugar.  Pour marshmallow mixture into pan.  Dust top of marshmallows with more powdered sugar.  Allow to dry out at least over night.  Then cut into squares and enjoy!!!!!
